Hot Bakes and Cocoa Tea – A love language…
Hot bakes and cocoa tea are damn near the most perfect combination. Any Saint Lucian will tell you that this simple duo brings back a wave of happy memories. A one degree drop in our usual blisteringly hot day is a good enough excuse to whip out a cocoa stick and snuggle up with a steamy cup of cocoa tea. Made from raw, organic cocoa, this time honored tradition is a labor of love. You must first dry the cocoa stick, grind it then roll it into a stick. This video shows the process nicely! Some people may add a few spices when the cocoa is rolled, such as cinnamon or nutmeg, but most times there is nothing added to the cocoa stick. I usually add the spices when the cocoa stick is boiled.
Everyone has their own methods but I enjoy bay leaf, star anise, cinnamon and nutmeg (with the mace). You then strain the mixture, sweeten and add your milk of choice.
